I had a friend recently send me a black and white shot if his eye, and wanted to know if I could turn just the inside blue, leaving the outside all black and white. Well, I took the image and threw the blue in it, but it didn't really match his actual original color very well. So he sent me some various shots of his eye, with its real blue color and I tried a few things.
 
Actually, the shot would have worked much better if the original image was in full color. And then I could take away the color in the rest of the image. Because its always much easier to change images to black and white, than to try to add color where there is none.
I always tell people, when working with digital images, "Take all of your images in full color and full resolution." 
You can always take colors away or enhance them, and you can always make images smaller.
